Satchmo’s Swinging Spaghetti Squash I’ve been reading a biography on the great Louis Armstrong, so I made this recipe for him! one spaghetti squash one 28 oz can crushed tomatoes 8 oz hot turkey sausage one onion diced 3 cloves garlic minced one green pepper, diced one tbl olive oil fresh basil cut Let's cook: In a skillet, sauta the onion and garlic with a pinch of salt and pepper in the oil. Add green pepper and minced sausage, brown than add crushed tomatoes and basil, reserving some of the basil to finish and garnish. While sauce cooks, slice squash lengthwise and scoop out the seeds. Put one half cup water in a baking dish and invert the two halves of squash face down in the dish. Cover with plastic wrap and pierce. Nuke on high for 10 -12 minutes. Use caution removing plastic as steam will burn!. Scoop out the strands of the squash, cover with sauce, sprinkle with grated cheese and garnish with fresh basil. Serve with garlic bread and steamed broccoli.
