SWEET POTATO LEEK SOUP ingredients: one bunch of leeks (4 or 5) quart of chicken stock one sweet potato olive oil fresh cracked pepper salt to taste to prepare: trim the leeks of their ends, wash well and chop them like you would a carrot into 1/8 inch rounds, heat soup pan on medium heat and add olive oil, 2tbs, when hot add chopped leeks and some pepper, saute for a few minutes and let caramelize( light brown), add chicken stock and bring to boil, peel and dice sweet potato and add to pan, add more cracked pepper ( remember it’s really your only seasoning ) stir, cover and lower heat to simmer for about 20 minutes, salt to taste and more pepper if you like. The sweet potatoes give a nice golden color and help thicken the broth.
